Barbecued Chicken & Mushroom Patties

Serves: 4
Ingredients:
- 500g (1lb) of chicken mince
- ½ cup of dried breadcrumbs
- 1 medium onion, chopped
- ½ teaspoon of pepper
- ½ teaspoon of salt
- 2 tablespoons of lemon juice
- 2 tablespoons of parsley, chopped
- ½ cup of mushrooms, finely chopped
Steps:
- Place chicken mince in a large bowl and add remaining ingredients. Mix well to combine ingredients, then knead a little with one hand to make the mince fine in a texture. With wet hands, shape into 4 or 5 patties.
- Preheat the oiled BBQ plate (griddle) to medium-high and place on patties. Cook for 8 minutes on each side or until cooked through. Prick with a skewer, if juices run clear, the patties are cooked.
Note: For quick preparation, place the onion, parsley and mushrooms in a food processor and chop together.
Serving Suggestion: Hot vegetables, and apricot and mango sauce.
Serve with: Riesling.
