Barbecued Chicken & Mushroom Patties

Cooking Time: 16 minutes

Serves: 4

Ingredients:

  • 500g (1lb) of chicken mince
  • ½ cup of dried breadcrumbs
  • 1 medium onion, chopped
  • ½ teaspoon of pepper
  • ½ teaspoon of salt
  • 2 tablespoons of lemon juice
  • 2 tablespoons of parsley, chopped
  • ½ cup of mushrooms, finely chopped

Steps:

  • Place chicken mince in a large bowl and add remaining ingredients. Mix well to combine ingredients, then knead a little with one hand to make the mince fine in a texture. With wet hands, shape into 4 or 5 patties.
  • Preheat the oiled BBQ plate (griddle) to medium-high and place on patties. Cook for 8 minutes on each side or until cooked through. Prick with a skewer, if juices run clear, the patties are cooked.

Note: For quick preparation, place the onion, parsley and mushrooms in a food processor and chop together.

Serving Suggestion: Hot vegetables, and apricot and mango sauce.

Serve with: Riesling.
