Herbed Lamb

 Herbed Lamb

Preparation Time:15 minutes, plus 30 minutes marinating

Cooking Time: 8 minutes

Serves: 4-6

Ingredients:

  • 12 (1kg/2 lb) rib lamb loin cutlets

Marinade:

  • 1 clove of garlic, crushed
  • 1 medium onion, grated
  • 2 tablespoons of finely chopped fresh oregano
  • 2 tablespoons of lemon juice
  • 4 tablespoons of olive oil
  • Salt and pepper, to taste

Steps:

  • Snip the edges of the cutlets to prevent them from curling.
  • To make marinade: combine all the ingredients in a large shallow dish.
  • Turn cutlets over in the marinade. Allow to marinate for 30 minutes, turning once.
  • Place cutlets on preheated plate (griddle) or grill and cook over medium heat with the hood down for 4 minutes. Turn and continue to cook for 3 minutes to give a medium rare result. Continue to cook if you prefer your cutlets well done, or if you are cooking without a hood.

Note: This marinade can also be used on cubes of boned lamb to be skewered.

Serving Suggestion: Crisp green salad or barbecued vegetables.

Serve with: Shiraz
