BBQ Pork with Apricot Mustard

 BBQ Pork apricot mustard

Preparation Time: 20 minutes

Cooking Time: 10-15 minutes

Serves: 4

Ingredients:

  • Apricot Mustard
  • 80g (2 ½ oz) dried apricots, sliced or chopped
  • 1 cup of water4 tablespoons of prepared wholegrain mustard
  • 1 tablespoon of honey
  • 4-8 pork steaks (loin, midloin, rump or Scotch) or pork cutlets or pork chops
  • Oil for brushing
  • Salt and pepper
     

Steps:

  • To make apricot mustard, combine all mustard ingredients and simmer for 1-2 minutes until slightly thick and set aside.
  • Brush both sides of pork with oil, season with salt and pepper.
  • Preheat BBQ plate (griddle) or grill until hot.
  • Cook pork for about 3-4 minutes each side or until medium done and the juices are just pink to clear. Avoid overcooking. Rest for a few minutes in a warm place on the BBQ, then serve.

Serving Suggestion: Potato salad and steamed green beans.
