Ingredients
- 400 grams potatoes
- 2 lemons
- 1 onion
- 50 grams curry powder
- ½ bunch of parsley
- 80 mls sunflower oil
- 2 balls of burrata
Method
- Turn on the flat plate side of the BeefEater Bugg Portable BBQ and pre heat on medium heat
- Chop the potatoes into 5cm thick slices, cut the onions into thin slices and loosely chop parsley
- Place a light coating of oil on your BBQ and place sliced potatoes on to cook
- Add the sliced onions and cook till soft
- Season on the BBQ with curry powder and salt
- Remove from the BBQ and place into a bowl
- Add some olive oil, chopped parsley, lemon juice and toss gently
- Place onto a serving platter, followed by the torn burrata and some extra olive oil and salt
