Marinate overnight in soy sauce and fish sauce, or if you’re in a rush just let it sit for about an hour

CRYING TIGER SAUCE
In a dry frypan, roast the rice by tossing constantly for 2–3 minutes over medium heat, until it is opaque and just starting to brown in spots.
Grind the rice to a rough powder in a mortar and pestle or in a food processor then set to the side, some texture is nice.
In the mortar and pestle, add in the sugar, chilli and the clove of garlic. Crush the chilli and garlic. Once that is done, add in fish sauce, lime and chilli powder and rice powder.
