Author – Issac Martin (@issac_eatsalot)
Ingredients
2 shallots
1/4 tbsp minced garlic
1 tbsp caster sugar
Pinch of salt
2 tbsp of butter
300g 80/20 beef mince
3 slices American cheese
Milk bun
Procedure
Finely slice the pink shallot and mix with diced garlic.
Add butter, shallot and garlic to a hot saucepan and cook off until aromas release and start becoming translucent.
Add sugar and salt. Continue stirring so that the sugar/caramel doesn't burn. Remove from heat.
Toast buttered milk buns on a hot flat cooking surface (cast iron preferable). Then place aside
Divide the mince into three even 100g balls. Smash the balls onto the hot cast iron surface of your BeefEater BBQ using a spatula or flat utensil before seasoning.
Flip when the mince is bubbling and changing to a grey/brown colour. Then add a slice of American cheese.
Once the cheese starts melting (rounded edges), stack them up and out onto your milk bun base.
Spoon the caramelised shallots onto your patties and close the bun lid, and enjoy!
