Marinated Haloumi & Zucchini Skewers with Herbie Dressing

Ingredients
  • 500g haloumi, cut into squares Haloumi
  • 3 zucchini, thinly sliced on a mandolin

Dressing

  • cup each finely chopped parsley & coriander
  • 1 tsp ground cumin
  • 1 tsp smokey paprika
  • 1 tbsp red wine vinegar
  • 1 clove garlic, finely chopped
  • 3 tbsp olive oil
  • Juice 1 lemon
Procedure
  1. Soak 8 long bamboo skewers in cold water for 20 minutes
  2. Make the dressing and marinate the haloumi in half of it.
  3. Preheat the BBQ on a high heat. Thread the haloumi onto skewers alternating with the zucchini.
  4. Brush with a little olive oil, lightly season with salt & pepper and grill, turning a couple of times until the haloumi & zucchini are lightly charred. About 3-4 minutes.
  5. Serve the skewers on a platter with remaining dressing spooned over, scatter & extra lemon wedges.
