Marinated Haloumi & Zucchini Skewers with Herbie Dressing

Ingredients
500g haloumi, cut into squares Haloumi
3 zucchini, thinly sliced on a mandolin
Dressing
cup each finely chopped parsley & coriander
1 tsp ground cumin
1 tsp smokey paprika
1 tbsp red wine vinegar
1 clove garlic, finely chopped
3 tbsp olive oil
Juice 1 lemon
Procedure
Soak 8 long bamboo skewers in cold water for 20 minutes
Make the dressing and marinate the haloumi in half of it.
Preheat the BBQ on a high heat. Thread the haloumi onto skewers alternating with the zucchini.
Brush with a little olive oil, lightly season with salt & pepper and grill, turning a couple of times until the haloumi & zucchini are lightly charred. About 3-4 minutes.
Serve the skewers on a platter with remaining dressing spooned over, scatter & extra lemon wedges.
