Classics are classics for a reason. This Greek-style marinade is full of zesty flavours that everyone in your family will enjoy - the ultimate crowd-pleaser that even the kids will love!
Ingredients
  • 1/4 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp fresh minced parsley
  • 2 tsp minced fresh garlic
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 1kg boneless skinless chicken breast, cut into 5cm squares
  • 2 punnet cherry tomatoes
  • 2 red capsicums, cut into 5cm squares
Procedure
  1. Put oil, lemon, parsley, garlic and spices in a large bowl. Stir to combine.
  2. Add chicken and toss to coat in marinade.
  3. Cover and refrigerate for 30 minutes or up to 24 hours.
  4. Soak bamboo skewers in hot water for 30 minutes, or use metal skewers if preferred.
  5. Thread marinated chicken, capsicum and tomatoes onto skewers before brushing with the remaining marinade.
  6. Cook on your BeefEater BBQ at medium heat, turning occasionally until cooked through for about 12-15 minutes.
